Papadeli bitter chocolate and hazelnut torte



(serves about 16)

This is such a delicious treat (ideal for wooing a lover or impressing a partner) – it has a divine crunchiness contrasting with the dark, bitter chocolate.  Serve with crème fraiche.

Ingredients

500g peeled and shelled hazelnuts
500g good quality dark chocolate couverture (available at the deli!)
500g unsalted butter (not refrigerated)
500g caster sugar
12 medium  eggs (free range)

Preheat oven to Gas 2/150C/ 300F.

Roast the nuts in the oven until the skin becomes crisp and falls off and the nuts become golden.  The skins will come off completely if you put the hot nuts in a tea towel and rub. Place in a food processer and chop to a rough texture.  Leave to one side

Put the chocolate in a bowl over a saucepan of simmering water and melt. Do not stir.  Using an electric mixer beat the soft butter with the sugar until soft.Slowly add the liquid chocolate.  Add the eggs one at a time, and mix gently.  When you have added all the eggs, remove the whisk and add the crushed nuts.

Pour the mixture into a greased cake tin.  Bake for 40-50 minutes.  It is ready when a skewer comes out dry..  Turn off the oven, but leave the cake in with door ajar for another 30minutes.  Allow to cool and remove from tin.
